as usual with emacs, the answer is "of course".

The document you are looking for is ess/doc/README.SAS

It should answer all your questions.  As you noticed it isn't yet
integrated into the info files.

To run S on a remote machine, use
  M-x S+elsewhere
as described in ess/doc/README.S
(where I notice that the description talks about "S-elsewhere", not
the correct "S+elsewhere")
