Hi David:

You need to alter the ESS variable inferior-STA-program-name.
Something like...
(setq inferior-STA-program-name
	"/Applications/Stata/StataMP.app/Contents/MacOS/StataMP")

But, beware.  I haven't tried Stata in any recent release of ESS.
