I recommend reading up a least a little on how this works (and there will a
number of tutorials that Google can point you too as this is decades-old and
trusted and unchanged technology). In short, there is _one_ set of genuine
sources (in texinfo format) and "everything else" generated from it: html,
pdf, info, ... So you want (in the ess source)

   cd doc
   make info

and the install step will likely install the created documentation. I cannot
help with macOS specific variations though.
